Garlic Scape Pesto

Ingredients

2 cups garlic scapes, chopped

1/2 cup toasted pine nuts or walnuts

1/2 cup extra virgin olive oil

1/2 cup pecorino romano cheese

1 cup fresh basil leaves

1 lemon, zested and juiced

1 teaspoon kosher salt

1 teaspoon pepper

DireCTIONS

Place the garlic scapes in the bowl of a food processor and pulse for 30 seconds, or until the scapes are mostly broken down.

Add the nuts, cheese, olive oil, salt, and pepper. Pulse to combine.

Add the basil and lemon, juice, and process until reaching the desired consistency.

Tip for freezing:

Do not add the cheese if you intend to freeze the pesto. It may separate and lead to an unpleasant final product. Just thaw the pesto and add the cheese.
